Affinato is a Traditional Balsamic Vinegar of Modena with a minimum aging of 12 years. It has a syrupy consistency and its organoleptic qualities are due to the slow osmosis between liquid, wood and time, which give it that combination of noble and precious aromas so pleasing to the palate.
Traditional Balsamic Vinegar of Modena PDO (Denominazione d’Origine Protetta – Protected Designation of Origin) Affinato to be commercialized is exclusively bottled by the Consortium in standard containers: 100 ml. ampoules designed by Giugiaro.

Description

Bottling takes place only when the balsamic vinegar obtains a positive judgment on the adequate level of maturation, free from defects. This operation is the prerogative of a tasting commission made up of experienced tasters appointed by the Consortium.  The Affinato is made from a long aging of cooked must subjected to slow acetification in small casks made of fine wood of different types and capacity, called batteries and then decanted from year to year from the largest to the one immediately following until reaching the smallest.
The minimum aging time is 12 years.  Once it is considered as “refined” in the cask, thanks to the aging, it can have access to commercialization. Its cost is therefore determined by the long aging procedures needed to refine it.
