Extravecchio is a Traditional Balsamic Vinegar of Modena with a minimum aging of 25 years. The fragrance and organoleptic qualities due to this very slow osmosis between liquid, wood and time, result in an extraordinary melting pot of taste sensations and are as exciting as can be imagined.
Extravecchio Traditional Balsamic Vinegar of Modena PDO (Protected Designation of Origin) to be commercialized is bottled exclusively by the Consortium in standard containers: the 100 cl ampoules designed by Giugiaro. It is the balsamic vinegar of choice.

 

Description

Bottling takes place in fact only after the balsamic vinegar has obtained a positive judgment on the level of maturation, and absence of defects, from a strict tasting commission composed of expert tasters expressed by the Consortium.  Extravecchio vinegar is produced with a very long aging process of cooked must which undergoes a slow acetification process in small casks made of precious woods of different types and capacities, called batteries and then decanted from year to year from the largest to the one immediately following until reaching the smallest.
The minimum aging time is 25 years.  Once considered “extra aged” in the cask, thanks to the long aging, practically there is no maximum limit of progressive years, indeed they are often to be considered excellent traditional balsamic vinegars derived from a centenarian battery. Its cost is therefore largely proportioned to the quality of the product and to the long aging process.
